Description

The wines of Manon are 100% organically estate grown. We have tended, cared for, loved, laboured and transformed these vines throughout the year which has created this exciting range of wines. Our vineyard is dry grown and farmed with bio dynamic and organic methods on a beautiful ridge high up (600m) made of a thin ancient top soil over mineral rich ironstone quartz, schist and red clay. The grapes are picked in small parcels by hand and fermented naturally in the cellar a few footsteps from the vines. The wines are left to their own over the winter with only the odd visit for a taste. The last two months of winter and the first of spring are spent in the vineyard pruning and sculpting the wines for the next season. Come mid-Spring when the earth warms up and the wild flowers pop up their heads we then return to the cellar to see how the wines have progressed to then look at bottling. – Distributor Note
